Green River Honey begins with a four-year-old Green River Kentucky Straight Bourbon. A custom blend of locally sourced, seasonally selected honey from the Above the Dirt Garden and Honey shop is then added directly into the barrel, allowing the bourbon and honey to marry naturally through barrel interaction rather than post-production blending. “For too long, honey whiskey has been defined by shortcuts,” said Dan Callaway, Master Blender, Lofted Spirits. “Natural flavors’ aren’t always as natural as they claim to be. Green River Honey is changing that – putting our money into real, natural honey and Kentucky Straight Bourbon. Its flavor and approachability opens the Green River brand up to higher energy occasions, plays well in a cocktail, and bridges a huge gap in the category between higher-priced honey-cask finishes and cheaper immature flavors.” Let’s get started!

Taken: Neat in a Glencairn glass, rested for about 10 minutes.

Distillery: Green River Distilling Co., Owensboro, KY.

Proof: 92.

Age: NAS (4 years).

Mash bill: 70% Corn/21% Rye/9% Malted Barley.

Finishings: Barrel containing 100% locally sourced honey.

Retail Price: $24.99.

Appearance: Light caramel.

Nose

Werther’s caramel, butterscotch, honeycomb cereal, ripe peaches, vanilla icing, green tea, and allspice. There’s a lot of delicious sweetness and stone fruit, with a noticeable amount of herbal green tea, which adds a nice balance to the sweeter flavors.

Palate

Caramel, honey, peaches, green tea, cinnamon spice, and candied pecans. The creaminess of the mouthfeel caught me so off guard on the very first sip that I forgot to focus on anything else. Like the nose, there’s a lot of sweet caramel, honey, and stone fruit, but there’s also an herbal green tea/sage note with a pop of spice that adds balance to this dessert profile.

Finish

Allspice carries on with caramel, honey, candied pecans, and stone fruit. As the spice disappears, soft leather and subtle pipe tobacco emerge for a sweet, medium-length finish.

Conclusion

Green River Honey-Finished Bourbon is a delicious, super-easy-drinking whiskey that satisfied my sweet tooth. I appreciate the natural honey flavor and how the youthfulness of this profile showed more in its brightness rather than in being grainy or astringent. I’ll mainly be using Green River Honey to make cocktails, but it’s also a fun and delicious dessert pour that will have a permanent home on my shelf. For $25, Green River Honey is a no-brainer

Bourbon Iced Tea
4 oz. Green River Honey Finished Bourbon.
2 oz. honey mint simple syrup.

4 oz. of chilled tea.
1 teaspoon of lemon juice.
Ice cubes.

Add ice and all the ingredients into a mixing glass, then stir. With a strainer, pour into a highball glass filled with ice. Garnish with a lemon slice (optional).
